About the Role
Working in conjunction with the Head of Catering and Hospitality to develop strategy and innovation in line with commercial food and menu planning to raise the profile of Queen Mary Food and Hospitality and improve revenues. You will have oversight of all food production, product development, purchasing & procurement, food safety, hygiene, health & safety, compliance, training and strategic planning activities for the service. Managing a team of 12 Chefs and kitchen assistants, the Head Chef will provide managerial oversight to all QMUL catering operational kitchen activities on all campuses, to include production, purchasing, storage, distribution, security, compliance, health & safety, and payroll. Responsible for a food & beverage expenditure budget of circa. £900k, providing high quality food and drink offers through multiple café, restaurant and hospitality operations.
You will have experience of multi-faceted high volume and complex catering operations, with an understanding of Higher Education catering. Key to the success of the role is the development of the team and you will have experience of coaching and mentoring and developing a skilled kitchen brigade
The successful candidate will have a NVQ/City & Guilds in Professional Cookery or equivalent, Management qualification or relevant experience and Level 3 Food Hygiene Certification.

The post is based at the Mile End Campus in London. It is full time (35 hours per week), permanent appointment. The starting salary will be Grade 6, in the range of £47,325- £52,833 per annum, inclusive of London Allowance.
